I've been trying to put together comprehensive posts containing all known Google Maps mashups for countries where I'm seeing the most mashup activity. Here is a list of the recent posts that I've done:

Sounds like you need to do a Google Maps mashup of all the Google Maps mashups around the world! :)
Trying not to be nitpicky, but I feel compelled to say that South America's not a country! :-)
Good call! :) Meant to add "various countries in.." at the time of posting, and didn't. It's there now. Not nitpicky at all, I'm the same way. :)

I recently posted a file on Google Earth Community that includes 25 wineries in the Lombardy region of Italy as well as some other useful information regarding wines and wineries.
There is also now a list of Rockit.it's music places in Italy.
And there was a post last month that provided a mashup of Milan's underground transit system.
