Don't mean to blow my own trumpet, but another mashup, somewhat different from most of the others listed here, is
The Old Ordnance Survey maps site (http://www.ponies.me.uk/maps/osmap.html)
This site uses the Google maps API to display scans of a selection of out-of-copyright OS maps from the 1920s to 30s with a few early War Office 40s maps thrown in as fillers.

Here's another new uk google mash-up, Tourist Information Maps (www.timaps.co.uk).
The site plots the locations of thousands of visitor attractions, including museums, gardens, historic houses, castles, art galleries, cathedrals and theme parks onto google maps.

I'm using Google Maps for a different idea. I've written a Java app for my Nokia N95 that updates my website with my location from GPS. The map scrolls around in real time following me if you catch me moving.
It'd be great to be able to show landmarks near where I currently was too.
